A rich, creamy mac and cheese featuring five delightful cheeses that create a cozy, comforting dish perfect for any occasion.

Ingredients

  • 1 box elbow macaroni
  • 12 oz evaporated milk (1 can)
  • 3 eggs
  • 8 tablespoons unsalted butter
  • 2 cups shredded cheddar cheese, divided
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons feta cheese, crumbled
  • 1 cup provolone cheese, cut into small pieces
  • ½ cup smoked gouda cheese, shredded
  • 4 teaspoons salt, divided
  • 2 teaspoons black pepper

Instructions

  1. Cook the Pasta: Boil elbow macaroni in a pot of water with 2 teaspoons of salt until al dente, then drain and set aside.
  2. Whisk the Sauce Base: In a large bowl, whisk together evaporated milk, eggs, and remaining 2 teaspoons of salt.
  3. Cheese Time: Melt butter in a skillet over medium heat. Add 1 ½ cups of shredded cheddar, mozzarella, feta, provolone, and gouda. Stir until melted and combined.
  4. Combine Everything: Toss cooked pasta into the skillet, then add milk-and-egg mixture and stir until evenly distributed.
  5. Bake It to Perfection: Preheat oven to 375°F. Transfer mixture to a greased baking dish, sprinkle with remaining cheddar, and bake for 25–30 minutes until golden and crispy.
  6. Serve and Enjoy: Let cool for 5 minutes, then serve and enjoy every cheesy bite.
