Delightful bite-sized cookies filled with the classic flavors of pumpkin pie, perfect for Thanksgiving gatherings.

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 cup pumpkin puree
  • 1/2 cup brown sugar
  • 1 teaspoon pumpkin pie spice
  • 1 egg yolk

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix together the flour and salt, then set it aside.
  3. In a mixing bowl, cream the softened butter and powdered sugar until it’s light and fluffy.
  4. Add in the vanilla extract, cinnamon, and nutmeg, mixing until well combined.
  5. Gradually add the flour mixture to the butter mixture, blending until a soft dough forms.
  6. Roll the dough into small balls and press them into greased muffin tins to create shells.
  7. In another bowl, combine the pumpkin puree, brown sugar, pumpkin pie spice, and egg yolk to create the filling.
  8. Spoon the pumpkin filling into each cookie shell, filling them about three-quarters full.
  9. Bake in the preheated oven for 15-20 minutes or until the edges are lightly golden.
  10. Let them cool before removing from the tins and enjoy these delightful Thanksgiving treats!
