Taco Fiesta Bubble Up Casserole

A delightful blend of crispy biscuits, seasoned beef, and fresh veggies, perfect for cozy dinners and gatherings.

Ingredients

  • 1 lb cooked extra lean ground beef
  • 1 package (7.5 oz) Pillsbury biscuits
  • 1 package Taco seasoning (30g)
  • 1 1/3 cup salsa
  • 2 cups diced peppers (red, orange, and yellow)
  • 1 cup diced red onion
  • 1 cup reduced fat shredded cheese (3 cheese blend)
  • Green onion (for topping)
  • Fat-free sour cream (for topping, optional)

Instructions

  1. Cook the ground beef in a pan on the stove and add the taco seasoning. Let it simmer for a few minutes.
  2. Preheat the oven to 350°F. Spray a 9×13 casserole dish and set it aside.
  3. In a bowl, mix the cooked ground beef with salsa.
  4. Cut up the peppers and onion, and then cut each biscuit into 6 pieces.
  5. Place half of the biscuit pieces in the bottom of the casserole dish. Top with half of the meat mixture, half of the peppers and onions, and half of the cheese.
  6. Repeat the layers, finishing with chopped green onions on top.
  7. Loosely cover with foil and bake in the oven for 35 minutes. Remove the foil and continue baking for another 15 minutes.
  8. Let cool for 5 minutes, then cut into 6 servings. Serve with fat-free sour cream if desired.

Notes

Experiment with different vegetables or beans for added nutrients and flavors. This dish can be made vegetarian by substituting with beans or lentils.
