Slow Cooker Parmesan Garlic Chicken and Potatoes

A comforting and easy slow cooker meal featuring tender chicken and hearty potatoes in a creamy Parmesan garlic sauce, perfect for busy families.

Ingredients

  • 2 pounds potatoes, cut into 1 1/2 – 2 inch chunks
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 3/4 teaspoon ground black pepper
  • 1/2 teaspoon paprika
  • 2 pounds skinless, boneless chicken breasts
  • 1 cup creamy Parmesan garlic sauce
  • 1/2 cup water or chicken stock
  • 2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese (optional)
  • 1 tablespoon chopped fresh parsley (optional)

Instructions

  1. Combine potatoes, olive oil, 3/4 teaspoon salt, 1/2 teaspoon black pepper, and paprika in the bottom of a slow cooker. Stir until well coated.
  2. Add chicken pieces on top and sprinkle with the remaining salt and pepper.
  3. In a separate bowl, whisk together the Parmesan garlic sauce and water or chicken stock until well blended. Pour this mixture over the chicken and potatoes in the slow cooker.
  4. Cook on High for 240 minutes or Low for 360 minutes, until the chicken is cooked through and the potatoes are tender.
  5. During the last 20 minutes of cooking, add the mozzarella and Parmesan cheeses. Continue to cook, covered, until the cheese is melted and bubbly.
  6. Sprinkle with fresh parsley before serving.

Notes

Cut potatoes into even chunks for consistent cooking. You can add your favorite vegetables for extra nutrition. For a creamier dish, mix in cream cheese towards the end of cooking.
