Healthy Shrimp Fried Rice

A flavorful and healthy version of shrimp fried rice using cauliflower rice and fresh veggies with a teriyaki twist.

Ingredients

  • 2 cups extra-large shrimp (650 g), peeled and deveined
  • 1 cup teriyaki sauce (240 mL)
  • 1 tablespoon vegetable oil
  • 2 cups fresh vegetables (300 g, e.g. broccoli, bell peppers, carrots, snap peas)
  • 2 large eggs
  • 2 cups cauliflower rice (200 g)
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil

Instructions

  1. Marinate the shrimp in teriyaki sauce for 10-15 minutes.
  2. Chop up your veggies into bite-sized pieces.
  3. Heat the vegetable oil in a skillet over medium-high heat, then cook the shrimp for 2-3 minutes on each side until pink and opaque. Remove the shrimp from the skillet.
  4. In the same skillet, scramble the eggs until just set, then push to one side.
  5. Add the fresh veggies to the skillet and stir-fry for 4-5 minutes until tender-crisp.
  6. Toss in the cauliflower rice, drizzle with soy sauce, and stir-fry for an additional 3-4 minutes until heated through.
  7. Return the shrimp and scrambled eggs to the skillet, mix thoroughly, and drizzle with sesame oil before serving.

Notes

Customize the veggies as per your preference and consider using frozen cauliflower rice for convenience.
