A quick and easy low carb chicken stir-fry that’s delicious and perfect for weight loss goals.

Ingredients

  • 2 boneless, skinless chicken breasts, diced
  • 2 tablespoons olive oil
  • 1 cup bell peppers, sliced
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste
  • Optional: sesame seeds for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the diced chicken and cook until no longer pink, about 5-7 minutes. Season with salt and pepper.
  3. Stir in the minced garlic and grated ginger, cooking for an additional minute.
  4. Add the bell peppers, broccoli, and snap peas. Stir-fry for about 5-7 minutes, or until the vegetables are tender but still crisp.
  5. Pour in the soy sauce and mix everything well. Cook for another 2 minutes, letting the flavors blend.
  6. Serve hot, garnished with sesame seeds if desired.

Notes

For quicker prep, use pre-cut veggies or frozen stir-fry mix. Store leftovers in an airtight container in the refrigerator for up to 3 days.
