A rich and creamy butter chicken made with tender chicken thighs, perfect for a busy weeknight or cozy family meal.

Ingredients

  • 1 ½ pounds skinless boneless chicken thighs, cut into bite-sized chunks
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon sweet paprika
  • ½ teaspoon curry powder
  • 1 tablespoon Greek yogurt
  • 3 tablespoons vegetable oil
  • 3 tablespoons butter (divided)
  • 6 garlic cloves (minced)
  • 1 medium onion (diced)
  • 1 15-ounce can tomato sauce
  • 1 teaspoon sugar
  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • 2 cups heavy cream
  • ½ teaspoon cayenne pepper (optional for heat)
  • 1 teaspoon garam masala
  • ½ teaspoon curry powder
  • ¼ cup freshly chopped parsley (optional, for garnish)
  • Naan bread
  • Steamed rice

Instructions

  1. In a bowl, mix the chicken with salt, garlic powder, sweet paprika, curry powder, and Greek yogurt. Let it marinate for at least 15 minutes.
  2. Heat the vegetable oil and 1 tablespoon of butter in a large skillet over medium heat. Add the marinated chicken and cook until golden brown, about 7-10 minutes.
  3. Remove the chicken and set it aside. In the same skillet, add the remaining butter. Melt it and stir in the minced garlic and diced onion, cooking until the onion is translucent.
  4. Pour in the tomato sauce, and add sugar, salt, black pepper, and cayenne pepper if using. Simmer for about 5 minutes.
  5. Return the chicken and mix it into the sauce. Pour in the heavy cream and sprinkle in garam masala and curry powder. Let it simmer for another 10 minutes, stirring occasionally.
  6. Toss in an extra tablespoon of butter before serving for extra richness.
  7. Garnish with freshly chopped parsley and serve hot with naan bread and steamed rice.

Notes

Marinate the chicken overnight for more flavor. Adjust spice levels by varying cayenne pepper. For a lighter option, substitute heavy cream with coconut milk.
