For the Cream Cheese Filling:
- 6 ounces cream cheese (room temperature)
- 1/3 cup granulated sugar
- 1/4 cup all-purpose flour
- 1 large egg
For the Pumpkin Bread:
- 1 cup pumpkin puree
- 3/4 cup brown sugar
- 1/4 cup granulated sugar
- 1/4 cup buttermilk (or regular milk)
- 1/4 cup cooking oil
- 1 large egg
- 1 1/4 cups all-purpose flour
- 1 tablespoon pumpkin pie spice
- 3/4 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
Instructions
- Preheat oven & prepare the pan. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- Make the cream cheese filling. In a bowl, mix the cream cheese, sugar, flour, and egg until smooth. Set aside.
- Prepare the pumpkin batter. In a large bowl, whisk together the pumpkin puree, brown sugar, granulated sugar, buttermilk, oil, and egg until smooth.
- Mix dry ingredients. In a separate bowl, combine the flour, pumpkin pie spice, baking powder, baking soda, and salt.
- Combine wet & dry ingredients. Gradually add the dry ingredients into the wet ingredients, stirring until just combined.
- Layer the batter & filling. Pour half of the pumpkin batter into the loaf pan. Spoon the cream cheese filling evenly over it, then top with the remaining batter. Use a knife to gently swirl the layers.
- Bake. Bake for 50–60 minutes or until a toothpick inserted in the center comes out clean.
- Cool & serve. Let the bread cool in the pan for 10–15 minutes before transferring it to a wire rack. Slice and enjoy!
Notes
- Store in an airtight container in the fridge for up to 5 days or freeze for up to 3 months.
- For extra crunch, sprinkle cinnamon sugar on top before baking.
- Add chopped pecans, walnuts, or chocolate chips for variety.
