Ingredients

For the Cream Cheese Filling:

  • 6 ounces cream cheese (room temperature)
  • 1/3 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1 large egg

For the Pumpkin Bread:

  • 1 cup pumpkin puree
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/4 cup buttermilk (or regular milk)
  • 1/4 cup cooking oil
  • 1 large egg
  • 1 1/4 cups all-purpose flour
  • 1 tablespoon pumpkin pie spice
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  1. Preheat oven & prepare the pan. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. Make the cream cheese filling. In a bowl, mix the cream cheese, sugar, flour, and egg until smooth. Set aside.
  3. Prepare the pumpkin batter. In a large bowl, whisk together the pumpkin puree, brown sugar, granulated sugar, buttermilk, oil, and egg until smooth.
  4. Mix dry ingredients. In a separate bowl, combine the flour, pumpkin pie spice, baking powder, baking soda, and salt.
  5. Combine wet & dry ingredients. Gradually add the dry ingredients into the wet ingredients, stirring until just combined.
  6. Layer the batter & filling. Pour half of the pumpkin batter into the loaf pan. Spoon the cream cheese filling evenly over it, then top with the remaining batter. Use a knife to gently swirl the layers.
  7. Bake. Bake for 50–60 minutes or until a toothpick inserted in the center comes out clean.
  8. Cool & serve. Let the bread cool in the pan for 10–15 minutes before transferring it to a wire rack. Slice and enjoy!
