A creamy and comforting potato cauliflower soup that’s simple to prepare and perfect for chilly evenings.

Ingredients

  • 2 medium potatoes, peeled and diced
  • 1 head of cauliflower, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the onion and garlic, and sauté until the onion is translucent.
  2. Add the diced potatoes and cauliflower, stirring for a few minutes.
  3. Pour in the vegetable broth and bring to a boil.
  4. Reduce heat and simmer until the vegetables are tender, about 15-20 minutes.
  5. Use an immersion blender to puree the soup until smooth.
  6. Stir in the grated Parmesan cheese until melted.
  7. Season with salt and pepper to taste. Serve hot.

Notes

For a creamier texture, add a splash of cream or milk. Fresh herbs like thyme or parsley can add an extra layer of flavor.
