A delicious comfort food combining fluffy scrambled eggs with savory fried rice, perfect for family gatherings or impressing friends.

Ingredients

  • 2 cups cooked rice
  • 1/2 cup cooked chicken (or other protein)
  • 1/2 cup mixed vegetables (peas, carrots, corn)
  • 1 onion, diced
  • 2 tablespoons ketchup
  • 3 eggs
  • 2 tablespoons milk
  • Salt and pepper, to taste
  • Butter or oil for cooking

Instructions

  1. In a pan, heat some butter or oil over medium heat. Add diced onion and sauté until translucent.
  2. Add cooked chicken and mixed vegetables, and stir until heated through.
  3. Add the cooked rice and ketchup to the pan, mixing well. Season with salt and pepper, and cook for a few minutes until heated through.
  4. In a bowl, beat the eggs with milk and season with salt.
  5. In another pan, melt some butter on medium heat and pour in the egg mixture. Scramble lightly and allow to cook until fluffy.
  6. Serve the ketchup fried rice on a plate, topped with the scrambled eggs.

Notes

Use day-old rice for better texture. Feel free to swap out chicken for shrimp or tofu for a vegetarian option. Don’t rush the eggs; let them cook slowly for a fluffier texture.
