A comforting chicken casserole that’s creamy, loaded with flavor, and topped with a crunchy Ritz cracker crust, perfect for family dinners and gatherings.

Ingredients

  • 4 cups shredded rotisserie chicken
  • 10.5 ounce can of cream of mushroom soup
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup sliced green onion tops
  • 1/2 cup toasted slivered almonds
  • 6 slices bacon, cooked, drained, and crumbled
  • 1 cup frozen green peas
  • 1 cup crushed Ritz crackers
  • 1/4 cup unsalted butter, melted
  • 1/2 cup shredded Monterey Jack cheese

Instructions

  1. Preheat your oven to 375°F and spray a 9×13-inch oven-safe casserole dish with nonstick cooking spray.
  2. In a large bowl, mix together the shredded chicken, cream of mushroom soup, sour cream, cheddar cheese, green onions, almonds, crumbled bacon, and frozen peas until everything is well combined.
  3. Transfer the mixture into your prepared casserole dish and spread it into an even layer.
  4. Cover the dish with aluminum foil and bake for 30 minutes, or until it’s bubbly.
  5. While it’s baking, mix the crushed Ritz cracker crumbs with the melted butter in a small bowl.
  6. After 30 minutes, take the casserole out of the oven, remove the foil, and sprinkle the top with Monterey Jack cheese and the prepared Ritz cracker mix.
  7. Return it to the oven for another 10 minutes or until the cheese is melted and the topping is golden brown.

Notes

For added flavor, consider mixing in garlic powder or Italian seasoning. You can add more veggies like diced bell peppers or mushrooms if desired.
