A light and tasty dinner option featuring fresh vegetables and tender fish, perfect for any occasion.

Ingredients

  • 2 fish fillets (such as cod or tilapia)
  • 1 cup cherry tomatoes, halved
  • 1 bell pepper, sliced
  • 1 zucchini, sliced
  • 1 lemon, thinly sliced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a baking dish, place the fish fillets and arrange the cherry tomatoes, bell pepper, zucchini, and lemon slices around them.
  3. Drizzle olive oil over the fish and vegetables.
  4. Sprinkle garlic, oregano, salt, and pepper on top.
