Low Carb Pizza Casserole

A delicious twist on pizza without the carbs, combining lean meats, colorful veggies, and plenty of melty cheese for a comforting dish.

Ingredients

  • 1 lb lean ground beef
  • 1 lb Italian sausage (mild or spicy)
  • 1 cup chopped bell peppers (any color)
  • 1 cup sliced mushrooms
  • 1 cup low-carb pizza sauce
  • 2 cups shredded mozzarella cheese
  • 1 cup shredded provolone or cheddar cheese
  • 2 tbsp olive oil
  • 2 tsp Italian seasoning
  • 1 tsp garlic powder
  • 1/2 tsp red pepper flakes

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. In a large skillet over medium heat, add olive oil and brown the ground beef and Italian sausage, breaking up clumps until cooked through.
  3. Add the chopped bell peppers and sliced mushrooms; stir in Italian seasoning, garlic powder, and red pepper flakes until fragrant.
  4. Pour in the low-carb pizza sauce and mix well; let it simmer for about five minutes.
  5. Layer half of the meat mixture in the baking dish, sprinkle with half of the mozzarella and provolone/cheddar cheese, then add the remaining meat mixture on top.
  6. Finish by topping with the remaining cheese blend and bake uncovered for 20-25 minutes until bubbly and golden brown.

Notes

Feel free to swap meats or add extra veggies for variation. Leftovers can be stored in the fridge for up to 4 days or frozen for longer storage.
