A comforting, low-carb dish packed with protein and veggies, perfect for weeknight dinners or meal prep.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1 cup cheddar cheese, shredded
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  3. In a mixing bowl, combine shredded chicken, broccoli, cauliflower, cheddar cheese, heavy cream, onion powder, salt, and pepper.
  4. Pour the mixture into a greased casserole dish.
  5. Bake in the preheated oven for 25-30 minutes, or until heated through and the cheese is bubbly.
  6. Let cool slightly before serving.

Notes

You can use any leftover chicken for extra flavor. For a kick, add red pepper flakes or jalapeños. Store leftovers in an airtight container for 3-4 days.
