Ingredients

  • 1 medium head of cauliflower, grated
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.
  2. In a food processor, pulse the grated cauliflower until it resembles rice.
  3. Microwave the cauliflower for about 8 minutes until soft.
  4. Let it cool and then squeeze out excess moisture using a clean towel.
