Ingredients

  • 1 head of cabbage, chopped
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, diced
  • 1 bell pepper, chopped
  • 4 cups vegetable broth
  • 2 cans diced tomatoes
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp Italian seasoning
  • Optional: hot sauce for flavor

Instructions

  1. In a large pot, sauté the onion, carrots, and celery until fragrant.
  2. Add the chopped cabbage and bell pepper, continuing to sauté for a few minutes.
  3. Pour in the vegetable broth and diced tomatoes.
  4. Season with garlic powder, salt, pepper, and Italian seasoning.
  5. Bring to a boil, then reduce heat and let simmer for 30 minutes.
  6. Adjust seasoning if necessary.
