A warm and hearty Korean soup, perfect for chilly days, packed with nutritious ingredients like kimchi and tofu.

Ingredients

  • 2 cups beef or chicken broth
  • 1 cup water
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 cup kimchi, chopped
  • 1 cup tofu, cubed
  • 1 cup mushrooms, sliced
  • 2 green onions, chopped
  • 1 teaspoon minced garlic
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste

Instructions

  1. In a pot, combine the broth and water, and bring to a boil.
  2. Add the soy sauce, sesame oil, kimchi, tofu, mushrooms, green onions, garlic, and ginger.
  3. Reduce heat and let simmer for about 20 minutes.
  4. Season with salt and pepper to taste.
  5. Serve hot.

Notes

Feel free to adjust the spice level by adding more or less kimchi. You can also add noodles for a heartier version.
