A quick and easy microwave cheesecake that is creamy, delicious, and keto-friendly, ready in under five minutes!

Ingredients

  • 1 cup cream cheese, softened
  • 1/4 cup granulated erythritol or preferred sweetener
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice

Instructions

  1. In a microwave-safe bowl, mix the softened cream cheese and sweetener until smooth.
  2. Add the egg, vanilla extract, and lemon juice, then mix until well combined.
  3. Microwave on high for about 1 minute, checking for doneness. The cheesecake should be set but a bit soft in the center.
