A creamy and cheesy broccoli soup that’s low in carbs, perfect for a ketogenic diet.

Ingredients

  • 2.5 cups chopped broccoli
  • 3 ounces shredded carrots
  • 1/2 diced onion
  • 3 cloves chopped garlic
  • 2 tablespoons butter
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 4 ounces full-fat cream cheese
  • 1 cup shredded sharp cheddar cheese (112g)

Instructions

  1. Dice the onion and chop the broccoli roughly.
  2. In a large pot on medium-high heat, add the butter and diced onion. Sauté until fragrant, then add the chopped garlic.
  3. Pour in the chicken broth and reduce the heat to a gentle simmer.
  4. Add the cream cheese and heavy cream to the pot.
  5. Toss in the chopped broccoli and carrots, then cover the pot and simmer, checking every few minutes.
  6. Once the broccoli is tender, stir in the shredded cheese until melted. Season with salt and white pepper to taste. Serve hot.

Notes

For a smoother soup, blend the mixture after cooking. You can also experiment with different types of cheese for added flavor.
