A delightful and savory dish bursting with umami flavor, perfect as a side or main meal over rice.

Ingredients

  • 500g fresh mushrooms (shiitake, cremini, or button)
  • 3 tablespoons miso paste (white or red)
  • 2 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons green onions, chopped (for garnish)
  • 1 tablespoon sesame seeds (for garnish)
  • Optional: chili flakes for extra heat

Instructions

  1. Clean the mushrooms gently with a damp cloth to remove any dirt.
  2. Slice the mushrooms into uniform pieces for even cooking.
  3. Heat the sesame oil in a large skillet over medium heat until it shimmers.
  4. Add the minced garlic and grated ginger to the skillet and sauté for 1-2 minutes until fragrant.
  5. Toss the sliced mushrooms into the skillet and cook for approximately 5-7 minutes until tender.
  6. In a small bowl, mix the miso paste and soy sauce with warm water to create a smooth sauce.
  7. Pour the miso sauce over the mushrooms, stir well to combine, and cook for another 2-3 minutes.
  8. Taste and adjust seasoning as needed, adding chili flakes for heat if desired.
  9. Remove from heat and garnish with chopped green onions and sesame seeds.
  10. Serve warm over rice or as a side dish.

Notes

Feel free to customize with different mushroom varieties or add spinach for nutrition. Store leftovers in an airtight container for up to three days.
