A delightful mix of potato chips with savory deli meats, cheeses, and fresh veggies for a quick and tasty snack.

Ingredients

  • 1/2 head iceberg or romaine lettuce (chopped fine or shredded)
  • 3 tablespoons mayonnaise (+ more if desired)
  • 2 tablespoons red wine vinegar (+ more if desired)
  • 1 teaspoon dried oregano or Italian seasoning
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • Salt and pepper (to taste)
  • 1 bag potato chips (any kind)
  • Assortment deli meat: turkey, mortadella, salami, prosciutto (chopped or torn)
  • Provolone cheese (chopped or torn; optional)
  • Tomatoes (chopped)
  • Pickled red onions (see below for recipe link)
  • Pepperoncinis (optional)
  • JalapeƱos (optional)
  • Olive oil (extra virgin)

Instructions

  1. In a medium bowl, mix together the chopped lettuce, mayonnaise, red wine vinegar, oregano, crushed red pepper flakes (if using), and salt and pepper. Toss until well combined.
  2. In a large bowl or snack bag, layer the potato chips as the base. Top with the Italian grinder salad, followed by the assortment of deli meats, cheese (if using), tomatoes, pickled red onions, and any optional toppings like pepperoncinis or jalapeƱos.
  3. Drizzle with olive oil before enjoying!

Notes

Experiment with different types of potato chips for flavor combinations. Adjust the amount of mayonnaise and red wine vinegar based on your taste preference.
