Deliciously moist pumpkin muffins with rich chocolate chips, perfect for fall.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup pumpkin puree
  • 1 cup chocolate chips
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 3/4 cup brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F and prepare a muffin tin by lining it with paper liners or greasing it lightly.
  2. In a large bowl, whisk together the all-purpose flour, baking powder, cinnamon, nutmeg, and salt.
  3. In a separate bowl, mix the pumpkin puree, eggs, vegetable oil, and brown sugar until smooth.
  4. Gently fold the dry ingredients into the wet mixture, being careful not to overmix. Stir in the chocolate chips until evenly distributed.
  5. Divide the batter among the prepared muffin cups, filling them about three-quarters full.
  6. Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until a toothpick inserted comes out clean.
  7. Allow the muffins to cool slightly before serving.

Notes

For an extra chocolatey flavor, use dark chocolate chips. A sprinkle of cinnamon sugar on top before baking adds a delicious crunch.
