Delicious and nutritious muffins made with pumpkin puree and Greek yogurt, perfect for breakfast or a snack.

Ingredients

  • 1 cup pumpkin puree
  • 1/2 cup Greek yogurt
  • 1/4 cup honey
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups whole wheat flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C). Line a muffin tin with liners or grease it lightly.
  2. In a large bowl, mix together the pumpkin puree, Greek yogurt, honey, eggs, and vanilla extract until smooth.
  3. In another bowl, whisk together the whole wheat flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  4. Combine the wet and dry ingredients, stirring until just mixed; don’t overmix!
  5. Divide the batter evenly into the muffin cups.
  6. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow them to cool before serving.

Notes

To ensure your muffins turn out perfectly, don’t overmix the batter; a few lumps are okay. You can also substitute maple syrup for honey if you prefer that flavor. Consider folding in some nuts or chocolate chips for added texture.
