Juicy grilled chicken margherita topped with mozzarella, basil pesto, avocado, and balsamic glaze. Perfect for a flavorful and vibrant dinner!

Ingredients

  • 3/4 cup balsamic vinegar
  • 1/4 cup honey
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 teaspoons Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 boneless, skinless chicken breasts
  • 4 slices mozzarella cheese
  • 1/2 cup basil pesto
  • 1 avocado, sliced
  • 1/2 cup cherry tomatoes, sliced
  • 1/4 cup fresh chopped basil

Instructions

  1. Prep the balsamic glaze by whisking together balsamic vinegar, honey, garlic, and salt.
  2. Season chicken with olive oil, Italian seasoning, salt, and pepper.
  3. Grill the chicken for 6–8 minutes per side or until it reaches an internal temperature of 165°F.
  4. Add mozzarella on top of the chicken and let it melt.
  5. Top each piece with basil pesto, avocado slices, cherry tomatoes, and fresh basil.
  6. Drizzle the balsamic glaze generously over the chicken and toppings.

Notes

  • Double the balsamic glaze for extra drizzle on side dishes.
  • For an alternative, try smoked mozzarella for deeper flavor.
