Garlic Butter Roasted Mushrooms

These garlic butter roasted mushrooms are a flavorful side dish or appetizer, quick to make with an amazing aroma while cooking.

Ingredients

  • 500g / 1lb mushrooms (button or Swiss brown / cremini or 8 large portabello)
  • 50g / 3 tbsp unsalted butter (melted)
  • 1 tbsp olive oil
  • 2 garlic cloves (finely minced)
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 1/2 tbsp lemon juice
  • 1 tsp fresh thyme leaves

Instructions

  1. Preheat your oven to 220°C / 450°F (or 200°F fan).
  2. In a large bowl, toss the mushrooms with melted butter, olive oil, minced garlic, salt, and pepper using a rubber spatula.
  3. Spread the mushrooms evenly on a baking tray and roast them for 25 minutes—don’t toss or turn them during cooking.
  4. Once done, remove the tray from the oven. Push the mushrooms together on one side of the tray, drizzle with lemon juice, sprinkle with thyme, and toss gently.
  5. Serve immediately and enjoy!

Notes

For extra flavor, add a dash of soy sauce or balsamic vinegar before roasting. If you prefer crispy mushrooms, roast them on a wire rack. You can mix different types of mushrooms for a more complex flavor.
