Shrimp Fried Rice

A delicious and healthy shrimp fried rice recipe that’s easy to make at home, ensuring flavor without sacrificing health.

Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 Tablespoon vegetable oil
  • 2 Tablespoons sesame oil (divided)
  • 3 cups cooked rice (day-old works best!)
  • 1 small white onion, chopped
  • 1 cup frozen peas and carrots, thawed
  • 2-3 Tablespoons soy sauce (adjust to taste)
  • 3 eggs, lightly beaten
  • 2 Tablespoons chopped green onions (optional)

Instructions

  1. Cook the shrimp. Heat the vegetable oil in a large skillet or wok over medium-high heat. Toss in the shrimp, and cook for 2-3 minutes on each side until they turn pink and curl up. Remove and set aside.
  2. Sauté the veggies. In the same skillet, add 1 Tablespoon of sesame oil. Toss in the chopped onion, peas, and carrots. Stir-fry for about 3-4 minutes until the veggies are tender and fragrant.
  3. Add the rice. Push the veggies to one side of the skillet, and add the remaining sesame oil. Dump in the cooked rice and stir to combine with the veggies. Let the rice fry for a couple of minutes to develop that golden crust.
  4. Scramble the eggs. Push the rice to one side of the pan, and pour the beaten eggs onto the other. Scramble them quickly, then mix everything together.
  5. Add the shrimp and soy sauce. Stir-fry for another 2-3 minutes until everything is heated through. Sprinkle with green onions if desired.
  6. Serve hot and enjoy your meal!

Notes

Consider swapping rice for cauliflower rice for a lighter option or using less oil for a healthier version.
