This easy Fried Egg Taco recipe is a breakfast winner. Crispy tortillas, melty cheese, fried eggs, and fresh toppings create the perfect bite every time. It’s quick, delicious, and customizable!

Ingredients

  • 1 tablespoon vegetable oil
  • 2 (6-inch) corn tortillas
  • 2 large eggs
  • 1/4 cup cheddar cheese, grated
  • Kosher salt and freshly ground black pepper, to taste
  • 2 tablespoons salsa, for garnish
  • 1/2 avocado, thinly sliced, for garnish
  • Cilantro leaves, for garnish

Instructions

  1. Heat the vegetable oil in a skillet over medium heat.
  2. Fry the corn tortillas for about 30 seconds on each side until crispy. Set aside.
  3. In the same skillet, crack the eggs and fry sunny-side up. Cook until whites are set and yolks are runny (or to your preference). Season with salt and pepper.
  4. Place one egg on each tortilla.
  5. Sprinkle with cheddar cheese while the egg is warm so it melts.
  6. Top with salsa, avocado slices, and cilantro leaves.
  7. Serve immediately and enjoy your Fried Egg Taco!

Notes

  • For extra crunch, fry the tortillas slightly longer.
  • Substitute corn tortillas with flour if preferred.
