- 2 (6-inch) corn tortillas
- 2 large eggs
- 1/4 cup cheddar cheese, grated
- Kosher salt and freshly ground black pepper, to taste
- 2 tablespoons salsa, for garnish
- 1/2 avocado, thinly sliced, for garnish
- Cilantro leaves, for garnish
Instructions
- Heat the vegetable oil in a skillet over medium heat.
- Fry the corn tortillas for about 30 seconds on each side until crispy. Set aside.
- In the same skillet, crack the eggs and fry sunny-side up. Cook until whites are set and yolks are runny (or to your preference). Season with salt and pepper.
- Place one egg on each tortilla.
- Sprinkle with cheddar cheese while the egg is warm so it melts.
- Top with salsa, avocado slices, and cilantro leaves.
