French Onion Beef Short Rib Soup

A cozy and rich soup featuring beef short ribs, caramelized onions, and melted Gruyère cheese, perfect for chilly evenings.

Ingredients

  • 2 lbs beef short ribs
  • 3 large yellow onions, sliced
  • 4 cups low-sodium beef broth
  • 2 tsp fresh thyme leaves
  • 1 tbsp balsamic vinegar
  • 1 cup shredded Gruyère cheese

Instructions

  1. Sear the beef short ribs in a large pot over medium-high heat until browned on all sides (about 5-7 minutes). Remove and set aside.
  2. In the same pot, add sliced onions and cook over medium heat until caramelized (20-25 minutes), stirring occasionally.
  3. Return the short ribs to the pot, add beef broth, thyme, and balsamic vinegar. Bring to a boil, then reduce heat and simmer for 1 hour.
  4. Remove short ribs, shred the meat using forks, discard bones, and return the meat to the broth.
  5. Serve in bowls topped with shredded Gruyère cheese; broil for 5 minutes until bubbly and golden.

Notes

For extra flavor, use a splash of red wine when caramelizing the onions. Let the soup sit for a few hours or overnight for deeper flavors.
