- 3.4-ounce box of vanilla pudding mix
- ¼ cup cream of coconut
- 20-ounce can of crushed pineapple (not drained)
- 8-ounce tub of whipped topping (thawed)
- 2 cups mini marshmallows
- 1 cup sweetened shredded coconut
- ½ cup chopped macadamia nuts
- ⅓ cup maraschino cherries (optional)
Instructions
- In a large bowl, combine the vanilla pudding mix with cream of coconut and juice from the crushed pineapple. Whisk until smooth.
- Gently fold in the thawed whipped topping until combined.
- Stir in the crushed pineapple, mini marshmallows, shredded coconut, and macadamia nuts until evenly distributed.
- Transfer to a serving dish or bowl, cover, and refrigerate for at least 2 hours to chill.
- Top with maraschino cherries before serving if desired.
Notes
- For extra flavor, toast the shredded coconut before mixing it in.
- Swap macadamia nuts with pecans or almonds if preferred.
- This dessert tastes even better when made a day ahead.
