A delightful dish with creamy flavors and tender chicken, perfect for a cozy family dinner or as a meal for guests.

Ingredients

  • 4 boneless skinless chicken breasts
  • Salt and pepper, to taste
  • 1 cup chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • ½ tsp dried thyme
  • ¼ tsp red pepper flakes (optional)
  • ½ cup chopped sun-dried tomatoes (in oil, drained)
  • 2 tbsp butter
  • Fresh basil or parsley, for garnish

Instructions

  1. Season chicken breasts with salt and pepper on both sides.
  2. In a bowl, whisk together chicken broth, heavy cream, Parmesan, garlic, oregano, thyme, and red pepper flakes.
  3. Place chicken in the crockpot and pour the sauce over the top.
  4. Sprinkle sun-dried tomatoes over the chicken.
  5. Cook on LOW for 4 hours or HIGH for 2 hours, until chicken is tender and cooked through.
  6. Add butter during the last 30 minutes of cooking and stir to combine.
  7. Garnish with fresh basil or parsley before serving. Serve with rice, pasta, or bread.

Notes

For extra flavor, marinate the chicken in the seasoning mix for a couple of hours before cooking. You can substitute heavy cream with half and half for a lighter version, though the creaminess may be reduced. Serve with garlic bread to soak up the sauce.
