A crispy, spicy, and garlicky shrimp dish that’s easy to make and tastes like restaurant quality.

Ingredients

  • 1 lb frozen shrimp (455 g), peeled and deveined (tails on)
  • 1 cup cornstarch (125 g)
  • 3 cups oil (720 mL) for frying (canola or vegetable)
  • 6 cloves garlic, chopped
  • 2 tablespoons fresh ginger, sliced
  • 2 teaspoons red pepper flakes
  • 2 teaspoons salt
  • 3 teaspoons black pepper, freshly ground
  • ¼ cup scallions (25 g), sliced
  • White rice, for serving

Instructions

  1. Prep the shrimp by defrosting if frozen, and pat it dry with paper towels.
  2. Coat the shrimp in cornstarch, ensuring an even coating.
  3. Heat oil in a deep pan or wok to 375°F (medium-high heat).
  4. Fry the shrimp in batches for 2-3 minutes until golden and crispy; drain on paper towels.
  5. In a separate pan, heat a tablespoon of leftover oil and add garlic, ginger, and red pepper flakes, stirring for 1-2 minutes.
  6. Add the fried shrimp to the pan, sprinkle with salt and pepper, and toss everything together.
  7. Serve the shrimp over a bed of white rice.

Notes

Ensure shrimp is dry before coating with cornstarch to prevent sogginess. Cook in small batches to maintain oil temperature.
