Description

This buttery croissant breakfast pie combines flaky layers, creamy eggs, crispy bacon, fresh vegetables, and melted cheese for a morning meal that feels both indulgent and easy to make. Perfect for busy mornings or as a standout brunch centerpiece!

Ingredients

Scale
  • 1 pre-made pie crust (because, let’s be real, who has time to make crust from scratch?)
  • 1 can of crescent rolls
  • 6 large eggs
  • 1 cup shredded cheddar cheese (sharp cheddar works best for that cheesy kick)
  • ½ cup cooked and crumbled bacon (crispy is key!)
  • ½ cup diced bell peppers (mix red and green for color and flavor)
  • ¼ cup diced onion (yellow or sweet onions work like a charm)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F. Grease a pie dish and press the pre-made pie crust into it.
  2. Line the crust with crescent rolls, pinching edges to create a seamless layer.
  3. In a bowl, whisk the eggs, adding salt and pepper to taste.
  4. Spread the bacon, bell peppers, and onions evenly over the crescent roll layer.
  5. Pour the egg mixture over the toppings, letting it fill all gaps.
  6. Top with shredded cheddar cheese.
  7. Bake for 25–30 minutes, or until eggs are set and the top is golden brown.
  8. Allow the pie to cool for 5–10 minutes before slicing and serving.

Notes

  • Feel free to swap bacon with sausage or keep it vegetarian by adding more veggies.
  • For extra creaminess, add a splash of milk to the egg mixture.
