A comforting and creamy potato soup that’s perfect for chilly days or quick dinners.

Ingredients

  • 6 medium potatoes, peeled and diced
  • 1 onion, chopped
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 cup cooked bacon, crumbled
  • 2 cups shredded cheddar cheese
  • Salt and pepper to taste
  • Chives or green onions for garnish

Instructions

  1. Place the diced potatoes and chopped onion in a slow cooker.
  2. Pour in the chicken or vegetable broth.
  3. Cook on low for 6-8 hours or on high for 3-4 hours until the potatoes are tender.
  4. Use a potato masher to mash some of the potatoes for a creamy texture.
  5. Stir in the heavy cream, crumbled bacon, and cheddar cheese.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with chives or green onions.

Notes

For an even creamier texture, blend half of the soup and mix it back in. Customize with Garlic, herbs, or other vegetables as desired.
