Deliciously satisfying stuffed bell peppers filled with ground turkey, cream cheese, and cheddar, perfect for a keto diet.

Ingredients

  • 4 large bell peppers
  • 1 pound ground turkey or beef
  • 1 cup cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup diced tomatoes (optional)
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a skillet, cook the ground turkey or beef over medium heat until browned.
  4. Stir in the cream cheese, cheddar cheese, garlic powder, onion powder, salt, pepper, and diced tomatoes (if using) until well combined.
  5. Stuff the bell peppers with the meat mixture and place them in a baking dish.
  6. Bake for 25-30 minutes, or until the peppers are tender.
  7. Garnish with fresh herbs if desired. Serve and enjoy!

Choose firm and vibrant bell peppers for the best flavor. Can be made vegetarian by using quinoa or lentils.
