A warm and creamy Cajun potato soup that’s perfect for chilly days, offering hearty flavors and a silky texture.

Ingredients

  • 5 medium potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons Cajun seasoning
  • Salt and pepper to taste
  • Optional toppings: green onions, crispy bacon, shredded cheese

Instructions

  1. In a large pot, sauté the onion and garlic over medium heat until soft.
  2. Add the diced potatoes and vegetable broth, and bring to a boil.
  3. Reduce heat and let simmer until the potatoes are tender, about 15-20 minutes.
  4. Stir in the Cajun seasoning and heavy cream.
  5. Use an immersion blender to blend the soup until creamy, or blend in batches in a regular blender.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with optional toppings.

Notes

For a thicker consistency, blend the soup longer. You can customize the recipe with additional vegetables or proteins.
