A comforting dish featuring creamy butternut squash gnocchi paired with savory sausage, perfect for gatherings or a warm weeknight dinner.

Ingredients

  • 1 lb butternut squash, peeled and cubed
  • 2 cups all-purpose flour
  • 1 egg
  • Salt and pepper to taste
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/4 cup unsalted butter
  • 1 lb Italian sausage, casings removed
  • 1 onion, finely chopped
  • 1 tablespoon olive oil
  • 1/2 teaspoon red pepper flakes

Instructions

  1. Boil the butternut squash in water until soft; drain and let it cool. Mash it into a smooth puree and transfer it to a mixing bowl.
  2. Add the egg, flour, salt, and pepper; mix until a dough forms. Roll the dough into long ropes and cut into bite-sized pieces. Use a fork to create ridges on the gnocchi for better sauce adherence.
  3. Bring a large pot of salted water to a boil; cook the gnocchi until they float to the surface. Drain and set aside.
  4. In a saucepan over medium heat, melt the butter and add garlic, sautéing until fragrant. Pour in the heavy cream and let it simmer. Stir in the Parmesan cheese until the sauce thickens. Season with salt and pepper.
  5. In another pan, warm olive oil over medium heat. Add the onion and cook until translucent. Crumble the sausage into the pan and add garlic and red pepper flakes, cooking until browned.
  6. Toss the cooked gnocchi with the creamy sauce, then add the sausage mixture and stir to coat all the pieces.
  7. Serve with your favorite garnish!
