Description

Creamy, cheesy, and loaded with bacon, Crack Potatoes are the ultimate comfort food. Perfect for lunch, dinner, or your next potluck!

 

Ingredients

  • 8 ounces cream cheese, softened
  • 1 1/2 cups sour cream
  • 1 package dry ranch dressing powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 pound bacon, cooked and chopped, divided
  • 3 cups cheddar cheese, shredded and divided
  • 30 ounces shredded hash brown potatoes

Instructions

  1. Preheat oven to 375°F.
  2. Cook the bacon until crispy, then chop into small pieces. Set aside a portion for topping.
  3. In a large bowl, mix cream cheese, sour cream, ranch dressing powder, onion powder, salt, and pepper until smooth.
  4. Stir in hash browns, 2 cups of cheddar cheese, and three-fourths of the bacon until well combined.
  5. Spread mixture into a greased 9×13-inch baking dish.
  6. Top with the remaining cheese and bacon.
  7. Bake for 40-45 minutes until golden and bubbly.
  8. Let cool slightly before serving.

Notes

  • For extra crispiness, broil the top for 2-3 minutes before removing from the oven.
  • Make ahead by assembling the casserole a day in advance and baking fresh.
