A delightful blend of sweet and savory chicken satay infused with coconut milk and lemongrass, perfect for gatherings or family dinners.

Ingredients

  • 1 lb chicken breast, cut into strips
  • 1 cup coconut milk
  • 2 stalks lemongrass, finely chopped
  • 2 tbsp soy sauce
  • 2 tbsp brown sugar
  • 1 tsp garlic powder
  • 1 tsp grated ginger
  • Skewers (soaked in water if wooden)
  • Peanut sauce for dipping

Instructions

  1. In a bowl, combine coconut milk, lemongrass, soy sauce, brown sugar, garlic powder, and ginger.
  2. Add the chicken strips to the marinade and let it sit for at least 1 hour.
  3. Preheat the grill to medium-high heat.
  4. Thread the marinated chicken onto skewers.
  5. Grill the skewers for about 5-7 minutes on each side or until fully cooked.
  6. Serve with peanut sauce for dipping.

Notes

For best flavor, let the chicken marinate overnight. Use fresh lemongrass for the best taste. You can also cook the chicken in a skillet or under the broiler if a grill is not available.
