Chicken and Zucchini Skillet

A delightful one-pan dish combining tender chicken with fresh zucchini, bell peppers, and tomatoes, perfect for busy weeknights.

Ingredients

  • 2 tablespoons olive oil
  • 1 pound boneless skinless chicken breasts, cut into bite-sized pieces
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 medium zucchinis, sliced into half-moons
  • 1 red bell pepper, chopped
  • 1 cup cherry tomatoes, halved
  • 1 teaspoon Italian seasoning
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh basil for garnish (optional)

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the chicken pieces and season with garlic powder, onion powder, salt, and pepper. Cook for about 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through.
  2. Add the sliced zucchini and chopped red bell pepper to the skillet. Sauté for another 4-5 minutes until the vegetables are tender.
  3. Stir in the cherry tomatoes and Italian seasoning. Cook for an additional 2-3 minutes until the tomatoes are warmed through.
  4. If desired, sprinkle the grated Parmesan cheese over the top and let it melt for a minute.
  5. Remove from heat and garnish with fresh basil before serving.

Notes

For extra crunch, add chopped carrots or snap peas. You can also switch up the protein with shrimp or turkey.
