Savor the goodness of Chicken Pitas! Juicy grilled chicken, creamy cucumber sauce, and crunchy veggies all packed into soft pita pockets.

Ingredients

For the Chicken:

  • 1 pound boneless skinless chicken breast halves
  • 1/2 cup balsamic vinaigrette

For the Cucumber Sauce:

  • 1 cup plain Greek yogurt
  • 1/2 cup finely chopped cucumber
  • 1/4 cup finely chopped red onion
  • 1 tablespoon minced fresh parsley
  • 1 tablespoon lime juice
  • 1 garlic clove, minced
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper

For the Pitas:

  • 8 pita pocket halves
  • 1/2 cup sliced cucumber
  • 1/2 cup grape tomatoes, chopped
  • 1/2 cup sliced red onion
  • 1/2 cup crumbled feta cheese

Instructions

  1. Marinate the Chicken: Coat chicken with balsamic vinaigrette and marinate for 30 minutes or more.
  2. Grill the Chicken: Cook marinated chicken on a grill or grill pan for 6–8 minutes per side. Slice into strips once done.
  3. Prepare the Cucumber Sauce: Mix Greek yogurt, chopped cucumber, red onion, parsley, lime juice, garlic, salt, and pepper in a bowl. Chill for better flavor.
  4. Slice the Veggies: Prep the cucumber, grape tomatoes, and red onion for the pita toppings.
  5. Assemble the Pitas: Spread cucumber sauce inside each pita, then layer grilled chicken, cucumber, tomatoes, red onion, and feta cheese. Add extra sauce if desired.

Notes

  • For added heat, sprinkle red pepper flakes on the chicken.
  • Warm the pita bread slightly for an extra soft texture.
  • Cucumber sauce can double as a dip or salad dressing.
