These chewy maple pumpkin cookies are loaded with warm spices and perfect for capturing the essence of fall.

Ingredients

  • 1 cup pumpkin puree
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/4 cup granulated sugar (for coating)
  • 1 teaspoon cinnamon (for coating)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the butter, brown sugar, and granulated sugar until smooth.
  3. Beat in the pumpkin puree and egg until well combined.
  4. In another bowl, whisk together the flour, baking soda, baking powder, spices, and salt.
  5. Gradually mix the dry ingredients into the wet ingredients until just combined.
  6. Scoop tablespoon-sized portions of dough and roll them into balls.
  7. In a small bowl, combine the granulated sugar and cinnamon for coating.
  8. Roll each dough ball in the sugar mixture and place on baking sheets lined with parchment paper.
  9. Bake for 10-12 minutes, or until the edges are set.
  10. Let the cookies cool on the baking sheets for a few minutes before transferring them to wire racks.

Notes

For extra flavor, you can add a touch of maple syrup to the dough. Store cookies in an airtight container at room temperature for about a week.
