Delicious and easy-to-make chicken nuggets coated with Cheez-Its for a cheesy crunch. Perfect for movie nights or gatherings!

Ingredients

  • 2 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • Kosher salt
  • Freshly ground black pepper
  • 1 large egg
  • 3/4 cup buttermilk
  • 1 Tbsp ranch seasoning
  • 5 cups Cheez-Its, crushed
  • 1 cup shredded cheddar
  • Ranch dressing, for serving

Instructions

  1. Preheat the oven to 425°F and arrange racks in the upper and lower thirds.
  2. Season the chicken pieces generously with salt and pepper.
  3. In a large bowl, whisk together the egg, buttermilk, and ranch seasoning. Add the chicken and toss to coat thoroughly.
  4. In another bowl, mix the crushed Cheez-Its and shredded cheddar.
  5. Coat the chicken pieces in the Cheez-Its mixture and press down to ensure they stick.
  6. Divide the coated nuggets between two baking sheets, making sure they are not overcrowded.
  7. Bake for about 12 minutes, or until the chicken is cooked through and an instant-read thermometer reads 165°F.
  8. Transfer cooked nuggets to a platter and serve with ranch dressing on the side.

Notes

For extra flavor, marinate the chicken in the egg and buttermilk mixture for 30 minutes. You can also add spices like cayenne pepper or garlic powder to the coating.
