Chewy and soft cookies capturing the autumn flavors of caramel and tart apples.

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 cup diced apples (peeled)
  • 1 cup caramel bits

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until the mixture is light and fluffy.
  3. Beat in the eggs one at a time, followed by the vanilla extract.
  4. In another bowl, whisk together the flour, baking soda, cinnamon, and salt. Gradually mix this dry mixture into the wet ingredients until just combined.
  5. Gently fold in the diced apples and caramel bits.
  6. Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake in the preheated oven for 10-12 minutes or until the edges turn golden.
  8. Let them cool on a wire rack before enjoying!

Notes

Ensure the apples are diced small for better flavor distribution. Cool on a wire rack to prevent sogginess.
