A delicious and easy recipe for crispy, tender butternut squash cooked in the air fryer.

Ingredients

  • 4 cups butternut squash, peeled and cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon sweet paprika
  • 2 teaspoons dried Italian seasoning
  • 1 teaspoon kosher salt
  • 1/4 teaspoon cracked black pepper

Instructions

  1. Preheat the air fryer to 400°F for about 5 minutes if necessary.
  2. Peel and chop the butternut squash into 1-inch cubes.
  3. Toss the squash cubes with olive oil, onion powder, garlic powder, sweet paprika, Italian seasoning, salt, and pepper in a large mixing bowl.
  4. Place the seasoned squash in the air fryer basket in a single layer, avoiding overcrowding.
  5. Air fry for 15–18 minutes, shaking the basket halfway through.
  6. Serve once golden brown and fork-tender, garnished with salt or fresh herbs if desired.

Notes

For best results, use fresh butternut squash. If using frozen squash, pat it dry before seasoning.
