Brown Butter Cookie Dough Croissants

Delightful croissants filled with rich, gooey brown butter cookie dough, perfect for brunch or as a late-night treat.

Ingredients

  • 4 leftover croissants
  • 110g (1/4 cup) butter
  • 1/3 cup + 2 tbsp brown sugar
  • 1/6 cup caster sugar
  • 2 egg yolks
  • 120g (1 cup) plain flour
  • 1/4 tsp baking soda
  • 50-75g chocolate chips

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. In a pan over low heat, start browning your butter. Keep stirring until the milk solids turn golden. Remove from heat and let it cool for about 15 minutes.
  3. In a mixing bowl, add the sugars to the cooled brown butter and mix until combined. Then, whisk in the egg yolks.
  4. Gradually add the flour, baking soda, and chocolate chips. Mix until a cookie dough forms.
  5. Cut open the croissants and place them on a lined baking sheet. Fill the insides with the cookie dough, then close the croissants and top them with more cookie dough.
  6. Bake for about 13 minutes or until the cookie dough is golden.

Notes

Keep a close eye on the butter while browning to prevent burning. Customize your filling with nuts or different types of chocolate.
