- 2 ½ pounds Yukon Gold potatoes (or red potatoes), peeled and chopped
- ½ cup butter, softened
- ⅓ cup heavy whipping cream
- 1 (5.2 oz) package of Boursin Garlic & Fine Herbs Cheese, softened
- ½ teaspoon garlic powder
- ½ teaspoon coarse salt, or to taste
- ¼ teaspoon cracked black pepper
- Fresh parsley, chopped (optional, for garnish)
Instructions
- Prep the Potatoes: Peel and chop the potatoes into equal-sized chunks.
- Cook the Potatoes: Place the potatoes in a pot, cover with cold water, and add a pinch of salt. Boil for 15-20 minutes until fork-tender.
- Drain and Dry: Drain the potatoes and return them to the pot. Heat on low to evaporate excess water.
- Mash the Potatoes: Add butter, cream, and garlic powder. Mash until smooth.
- Add Boursin Cheese: Stir in the Boursin cheese until melted and combined. Adjust seasoning with salt and pepper.
- Serve: Transfer to a dish, garnish with parsley, and serve hot.
Notes
- Make ahead and store in the fridge for up to 2 days. Reheat with a splash of cream.
- Customize with added herbs, roasted garlic, or crumbled bacon for extra flavor.
