Creamy and flavorful mashed potatoes made with Boursin Garlic & Fine Herbs Cheese. Perfect for dinner, holidays, or anytime comfort food is needed!

Ingredients

  • 2 ½ pounds Yukon Gold potatoes (or red potatoes), peeled and chopped
  • ½ cup butter, softened
  • ⅓ cup heavy whipping cream
  • 1 (5.2 oz) package of Boursin Garlic & Fine Herbs Cheese, softened
  • ½ teaspoon garlic powder
  • ½ teaspoon coarse salt, or to taste
  • ¼ teaspoon cracked black pepper
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Prep the Potatoes: Peel and chop the potatoes into equal-sized chunks.
  2. Cook the Potatoes: Place the potatoes in a pot, cover with cold water, and add a pinch of salt. Boil for 15-20 minutes until fork-tender.
  3. Drain and Dry: Drain the potatoes and return them to the pot. Heat on low to evaporate excess water.
  4. Mash the Potatoes: Add butter, cream, and garlic powder. Mash until smooth.
  5. Add Boursin Cheese: Stir in the Boursin cheese until melted and combined. Adjust seasoning with salt and pepper.
  6. Serve: Transfer to a dish, garnish with parsley, and serve hot.

Notes

  • Make ahead and store in the fridge for up to 2 days. Reheat with a splash of cream.
  • Customize with added herbs, roasted garlic, or crumbled bacon for extra flavor.
