A delicious and healthy alternative to traditional mashed potatoes, this creamy mashed cauliflower is low in carbs and packed with flavor.

Ingredients

  • 1 large head cauliflower, cut into florets
  • 3 cloves garlic, minced
  • 1/4 cup heavy cream
  • 2 tablespoons butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon fresh chives, chopped

Instructions

  1. Steam or boil cauliflower florets until very tender, about 10-12 minutes. Drain well.
  2. In a skillet, melt butter over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Transfer cooked cauliflower to a food processor. Add garlic butter, heavy cream, salt, and pepper. Blend until smooth.
  4. Stir in Parmesan cheese and adjust seasoning if needed.
  5. Garnish with fresh chives before serving.

Notes

For an extra creamy texture, blend the cauliflower long enough to eliminate lumps. You can use a potato masher if you don’t have a food processor. For a flavor twist, try different herbs or cheeses.
