A quick and comforting homemade beefaroni recipe, perfect for busy weeknights and guaranteed to please the whole family.

Ingredients

  • 8 ounces elbow macaroni
  • 1 pound lean ground beef
  • 1 small yellow onion, minced
  • 3 cloves garlic, minced
  • 2 teaspoons paprika
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 29-ounce can tomato sauce
  • Grated sharp cheddar cheese, for serving

Instructions

  1. Cook the elbow macaroni in salted water until al dente, then drain and set aside.
  2. In a large skillet or pot, brown the ground beef over medium-high heat, breaking it up as it cooks. Drain off excess fat if necessary.
  3. Add the minced onion and garlic to the beef and sauté until the onion is soft and translucent, about 3-5 minutes.
  4. Stir in paprika, oregano, salt, and pepper, and cook for a minute.
  5. Add the tomato sauce and let it simmer for about 10 minutes, stirring occasionally.
  6. Fold the cooked macaroni into the sauce and stir until coated. Adjust seasoning if necessary.
  7. Serve in bowls topped with grated sharp cheddar cheese, and optionally broil for a minute to melt the cheese.

Notes

For a veggie boost, add finely chopped carrots, zucchini, or bell peppers. This dish reheats well and can be made ahead of time.
