BBQ Salmon with Mango Avocado Salsa

Tender, smoky-sweet BBQ salmon paired with a vibrant mango avocado salsa over fluffy rice, perfect for a quick weeknight dinner.

Ingredients

  • 1-2 lbs fresh salmon
  • 2 tbsp brown sugar
  • 2 tsp smoked paprika
  • 2 tsp onion powder
  • 1 tsp garlic powder
  • ½ tsp chili powder
  • ½ tsp kosher salt
  • 2 tbsp olive oil
  • 2 mangoes, diced
  • 1 avocado, diced
  • ¼ cup cilantro, minced
  • ¼ cup red onion, minced
  • ½ jalapeño, minced (optional)
  • 1 tsp honey
  • 2 tbsp lime juice + 1 tsp zest
  • Salt to taste
  • 1 ½ cups cooked rice

Instructions

  1. Preheat the oven to 475°F (or broil at 500°F for extra crispiness).
  2. Combine spices with olive oil into a paste; rub on salmon.
  3. Place salmon skin-side down on a foil-lined sheet; bake for 6-12 minutes.
  4. Prepare rice as per package instructions.
  5. Mix all salsa ingredients in a bowl; adjust seasoning.
  6. Serve by layering rice, salmon, and salsa in bowls; garnish with lime.

Notes

Watch carefully if broiling; sugar can burn. Fresh or thawed frozen mango works for salsa.
