A warm, fragrant apple spice cake with moist apples, warm spices, and a creamy brown sugar cream cheese frosting.

Ingredients

  • 4 cups Granny Smith Apples, chopped into small pieces (about 4 medium apples)
  • 2 cups sugar
  • 1/2 cup vegetable oil
  • 2 eggs, lightly beaten
  • 1 teaspoon vanilla
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 2 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • 1 teaspoon salt
  • 1/2 cup milk
  • 1 cup pecans, roughly chopped
  • 1 package cream cheese frosting (8 ounces, room temperature)
  • 1/4 cup butter, softened
  • 2 teaspoons vanilla
  • 1 cup golden brown sugar

Instructions

  1. Prep the apples by chopping them into small, bite-sized pieces.
  2. In a large bowl, mix sugar, vegetable oil, eggs, and vanilla until smooth.
  3. In a separate bowl, sift together flour, baking powder, baking soda, cinnamon, nutmeg, and salt; alternate adding to the wet mixture with milk until combined.
  4. Fold in the chopped apples and pecans gently.
  5. Preheat the oven to 350°F and prepare a 9×13 inch baking dish. Pour the batter in and bake for 45-50 minutes or until a toothpick comes out clean.
  6. For the frosting, beat together cream cheese, butter, vanilla, and brown sugar until smooth and fluffy.
  7. Once the cake cools, frost generously and enjoy.

Notes

Storage: Cake tastes better the next day; store in an airtight container in the fridge for up to five days.
